Home made ice cream without an ice cream maker :
Ingredients
1 cup (250ml) whole milk
A pinch of salt
3/4 cup (150g) sugar
2 cups (500ml) heavy cream
5 large egg yolks
3/4 teaspoon vanilla bean paste or vanilla extract
Directions
Heat the milk, heavy milk, salt, and sugar in a
saucepan over medium-low heat, stirring
occasionally, until the milk and cream are warm
(but not boiling) and the sugar has dissolved.
In a separate bowl, stir together the egg yolks.
Then gradually pour some of the milk into the
yolks, whisking constantly as you pour.
Transfer the mixture back to the saucepan and
cook over medium heat, stirring constantly, until
the mixture thickens enough to coat the back of a
wooden spoon
Strain the custard into the heavy cream , chill
until very cold atleast 4 hrs , add the vanilla
extract, then refrigerate to chill thoroughly.
Transfer the custard to your refrigerator freezer,
and stir vigorously. After forty-five minutes,
check it.As it starts to freeze near the edges,
remove it from the freezer and stir it vigorously,
really beat it up and break up any frozen sections.
Return to freezer.
Continue to check the mixture every 30 minutes,
stirring vigorously as it’s freezing. Keep checking
periodically and stirring while it freezes (by hand
or with the electric mixer) until the ice cream is
frozen.This is done to achieve the creamy texture
of the ice cream.
It will likely take 2-3 hours to be ready. Transfer
the ice cream to a covered storage container until
ready to serve
It's a little time consuming but it's all worth it.
